As most people are full swing into their bikini body diets (me included) I thought I’d share these healthy banana and oat flour pancakes. I was after something to satisfy my sweet tooth cravings the other day so I thought I would make these- at less than 30 calories a biscuit they couldn’t hurt! That was of course until I proceeded to eat the whole batch…..(I wish I was joking).
So here they are, they’re so simple and take no more than 10 minutes to make plus 10 minutes to cook. All you need is some plain porridge oats, a teaspoon of honey, skimmed milk, 3 small or 2 medium bananas, a teaspoon of baking powder and 2 teaspoons of Stevia or another artificial sweetener of your choice. I used a blender but a whisk or a handheld blender would work fine.
First ground the oats- I used 4 sachets of Original Quaker oats which equals around 110g. Then add in the bananas, chopped. Add 2 tablespoons of skimmed milk, the baking powder, stevia and honey and blend. You should have a fairly thick consistency. I then keep adding a tablespoon of skimmed milk at a time until you get a slightly running consistency but one which will hold its shape on the baking tray. In total this is usually 6-7 tablespoons.
Line a couple of baking trays with baking paper and use a spoon to create small circle shapes. I usually make them small as for some reason I think this means I can have 2 or 3 and it’s still okay (?!) but you can make them whatever size you like.
Cook for 10 minutes or until golden brown then serve!
FYI- Using these quantities I made 24 and worked out there was less than 30 calories per cookie.
